Dumfries dates with a bit of history
The Theatre Royal, built in 1792, is the oldest working theatre in Scotland. It's run by volunteers from the Guild of Players, who stage their own productions as well as hosting visiting companies such as Scottish Opera, and a night there is a good test of whether you enjoy each other's company. For a daytime meeting, Dumfries Museum is built around an 18th-century windmill on a small hill above the town, with a camera obscura on the top floor, and the aviation museum in the control tower near Tinwald Downs is the only private one of its kind in Scotland.
The town also has a university campus, Scotland's first shared by several institutions: since 1999 the 85-acre Crichton estate has hosted the University of the West of Scotland and the University of Glasgow. Since the bypass opened in the 1980s, a lot of shopping and business has drifted out to the edge of town, so agree an exact meeting spot before you set off.
